Chocolate processing in Modica is an ancient ritual that creates a completely different type of chocolate to what we're used to.
The traditional cold process involves no use of milk, butter or other fats, and the result is an exquisitely delicate product.
Moreover, using this particular technique, the sugar doesn’t melt but rather crystallises, giving the chocolate its unique taste.
The processing method is very old and was brought to Sicily by the Spaniards, who were taught this precious technique by the Aztecs, a people with a deep love for this black powder.
In this part of Sicily, you will discover how to make chocolate also by creating your own chocolate bar, a souvenir of the workshop. The experience ends with a tasting of the Modican chocolate while strolling through the scent of aromas such as pistachio, chilli and vanilla.
